Gradually add cake mix and mix well. Form dough into 1-inch balls. Place on ungreased cookie sheet. Flatten balls with bottom of glass dipped in sugar. Pinch out 2 ears at top of cookie. Add M &amp;amp; M's (eyes) and red hots (nose). Press fork into dough to form whiskers. Bake at 375 degrees for 8-10 minutes. Yields 4 1/2 dozen.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;--------------------------------------------------------------------------------&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;&lt;b&gt;PUMPKIN COOKIES&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;1 stick butter&lt;br /&gt;1/2 c. sugar&lt;br /&gt;1 egg&lt;br /&gt;1/2 c. cooked pumpkin or pie filling&lt;br /&gt;1/2 tsp. vanilla&lt;br /&gt;1 c. all-purpose flour&lt;br /&gt;1/2 tsp. baking soda&lt;br /&gt;1/4 tsp. salt&lt;br /&gt;1/2 tsp. cinnamon&lt;/span&gt;        &lt;br /&gt;&lt;span style="font-size: 100%;"&gt;Preheat oven to 375 degrees. Cream the butter and sugar together in bowl. Add egg, pumpkin and vanilla. Sift dry ingredients together and add to bowl. Mix. Drop by tablespoons onto greased cookie sheet. Bake for about 15 minutes or until lightly browned.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;--------------------------------------------------------------------------------&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;&lt;b&gt;PERFECTLY PLUMP PUMPKIN MUFFINS&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;1/2 cup sugar&lt;br /&gt;2 tblsps. salad oil&lt;br /&gt;1 egg&lt;br /&gt;1/2 cup milk&lt;br /&gt;2 cups flour&lt;br /&gt;2 tsps. baking powder&lt;br /&gt;1 tsp. salt&lt;br /&gt;1 cup pureed pumpkin&lt;/span&gt;       &lt;br /&gt;&lt;span style="font-size: 100%;"&gt;Cream sugar and oil. Add egg and milk. Add dry ingredients, sifted. Add pumpkin and mix all together. Bake 20 minutes at 375 degrees and frost with white frosting. Yields 12 medium-sized muffins.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;--------------------------------------------------------------------------------&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;&lt;b&gt;CLASSIC CARAMEL APPLES&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: 100%;"&gt;1 lb. caramels&lt;br /&gt;3 tbsp. milk&lt;br /&gt;6 med. apples&lt;br /&gt;6 wooden skewers&lt;br /&gt;Chopped walnuts or other toppings, if desired&lt;/span&gt;    &lt;br /&gt;&lt;span style="font-size: 100%;"&gt;Wash and dry apples, insert stick. Unwrap caramels and place in double boiler or microwave safe dish. Add milk and melt, stirring until smooth. Dip apples into melted caramel, coating evenly, and roll in nuts if desired. Place on greased waxed paper to cool, then store in refrigerator. Other than a bit of flour here and a glob of batter there, she did a pretty good job of helping out and her bonus seemed to be the chocolate chips she picked out as she stirred! Well of course that DID depend on what was mixed! But it brings back memories of great times.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span id="fullpost"&gt;Remember to get your family involved in the process. Baking cookies in itself can be a lot of work, but getting that little ones helping hand makes for a great family time. Not only can they be involved in mixing together the whole batch (with or without a spoon, depending on your stress level) they also can help decorate the cookies. Now they might get more frosting and decorations on the counter or in their mouths, but you know they are having a great time. And can you truly pass up a moment like that? I am sure glad that I didn't. It meant a little more cleaning up to do, but it was worth it. She was worth it.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span id="fullpost"&gt;It is those small moments that pass us by that we take for granted. Even at two, I could tell she was having a great time, even though she probably will not remember it all as she grows. But I will remember it and log it in my "great times of the past". Enjoy and Happy Holidays!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Frosted Sugar Cookies&lt;/span&gt; - Great fun for the whole family!&lt;br /&gt;&lt;/span&gt;&lt;ul&gt;&lt;li&gt;&lt;span id="fullpost"&gt;3-3/4 cups all purpose flour&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;1 tsp baking powder&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;1/2 tsp salt&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;1 cup butter or margarine, softened&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;1-1/2 cups granulated sugar&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;2 eggs&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;2 tsp vanilla extract&lt;/span&gt;&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;ul&gt;&lt;li&gt;&lt;span id="fullpost"&gt;white frosting (store bought is fine)&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;food coloring&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="fullpost"&gt;sprinkles, gum drops, other decorations&lt;br /&gt;&lt;/span&gt;&lt;/li&gt;&lt;/ul&gt;Sift flour, baking powder, and salt together in a medium sized bowl. Set aside. Beat butter or margarine, sugar, eggs, and vanilla in a large bowl until fluffy. Gradually add flour mixture and stir with wooden spoon until thoroughly mixed. Cover dough with plastic wrap and chill in the refrigerator for two hours.&lt;br /&gt;&lt;br /&gt;Preheat oven to 400 F. On a lightly floured surface, roll out dough to 1/4 inch thick. Cut out shapes with a cookie cutter or other object, such as a glass or round plastic container. Place 2” apart on ungreased cookie sheet. Bake for 6-8 minutes, checking after 6 minutes. Cookies will be done when edges are lightly browned. Do not allow cookies to get too brown. Remove from oven and allow cookies to cool on cookie sheets for 5 minutes. Roll out dough and cut into 4 inch long strips, about 1/2 to 3/4 inches wide; place on baking sheet. Curve top to form handle of cane. Bake 9 minutes. While still warm, remove from pan and sprinkle with candy and sugar mixture. Another option is to take half of your dough and add red food coloring. Layer one red and one white strip and then lightly twist together, place on cookie sheet. Line a cookie sheet with waxed paper. In a double boiler, melt chocolate until smooth. Be careful not to burn or scorch the chocolate. Stir in crushed candy canes. Save a some crushed candy canes for the topping. Pour mixture on to waxed paper into even layer. Sprinkle remaining crushed candy canes on top. Refrigerate about 30 minutes until set. Break into chunks by hand and store in sealed container. Here are a few cookie recipes that you can try out:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;h2 style="font-family: verdana;"&gt;Pumpkin Oatmeal Chocolate Chip Cookies&lt;/h2&gt;&lt;ul face="verdana"&gt;&lt;li&gt;2 cups all-purpose flour&lt;/li&gt;&lt;li&gt;1 cup quick cooking rolled oats, uncooked&lt;/li&gt;&lt;li&gt;1 teaspoon baking Soda&lt;/li&gt;&lt;li&gt;1 teaspoon ground cinnamon&lt;/li&gt;&lt;li&gt;1/2 teaspoon salt&lt;/li&gt;&lt;li&gt;1 cup butter, softened&lt;/li&gt;&lt;li&gt;1 cup packed brown sugar&lt;/li&gt;&lt;li&gt;1 cup granulated sugar&lt;/li&gt;&lt;li&gt;1 large egg, slightly beaten&lt;/li&gt;&lt;li&gt;1 teaspoon vanilla extract&lt;/li&gt;&lt;li&gt;1 cup canned pumpkin&lt;/li&gt;&lt;li&gt;1 cup semi sweet chocolate chips&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;Preheat oven to 350F. Stir in walnuts. Drop dough by teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 375F for 12 minutes.  Cool on wire racks. Frost with Maple Frosting. Yield: 7 1/2 dozen.  &lt;p&gt;Maple Frosting&lt;/p&gt;&lt;p&gt;Cream butter; gradually add 1 cup powdered sugar, beating well at medium speed of an electric mixer.  Add remaining sugar alternately with milk, beating until smooth enough to spread. Add maple extract, and beat well. In my opinion, it seems like the "cookie" has been shorted on the quotes, sayings and proverbs.&lt;span id="fullpost"&gt;&lt;br /&gt;The pie industry continues to see increased sales, and is closing in on $600 million. Unfortunately the cookie industry has started to see a decline in sales, dropping down close to $4 billion a year.&lt;br /&gt;&lt;br /&gt;You have to wonder if it has to do with the lack of exposure to common day conversation filler that we think less about cookies and more about pie? It's shown that cookies still outsell pie, but it seems to me that the cookie is still getting the &amp;amp;*%&amp;amp;$* end of the stick!&lt;br /&gt;&lt;br /&gt;If cookies have any chance of turning around this latest decline, there needs to be more focus on our favorite snack time food. We already have a few sayings like "smart cookie", proving that cookies are superior, but then there is "that's how the cookie crumbles" not instilling a lot of confidence in the former. Cookies are getting a bad rap. We need to spruce up the English language if we want to see cookie exposure on the rise.&lt;br /&gt;&lt;br /&gt;Upon browsing one of the largest online databases of English proverbs, NO proverbs were found when I searched "cookie". However, when searching "apple" and "pie", I was presented with 18 references. Need I say more???&lt;br /&gt;&lt;br /&gt;It is up to YOU to turn it around. Either older sayings, quotes and proverbs are modified to reference cookies, or you come up with fresh, new ones.&lt;br /&gt;&lt;br /&gt;Here's some to get started. She would always put the refrigerator cookies in the Velveeta boxes in the refrigerator. Probably a use for those boxes that we would never even think of today. It, of course, makes the cookies square, which allows for easier packing into containers. It also means that you do not have to mess with trying to get the cookies into a perfect roll. Also no danger of the kids putting something on top of the cookies and smashing them. Put wax paper or plastic wrap into Velveeta boxes and push the cookie mixture into the boxes. Refrigerate the cookies overnight. The next day take the refrigerator cookies out and slice them (about 1/8 inch thick). Add the brown sugar to this mixture. Add in the egg and mix well. Alternate adding the dry ingredients (flour, salt, and baking soda) with the evaporated milk. Put wax paper or plastic wrap into Velveeta boxes and push the cookie mixture into the boxes. Refrigerate the cookies overnight. Clusters of big, gourmet cookies, individually wrapped in shiny, colored cellophane, with bows and ribbons. They come in many styles and with different treats, toys or gift items attached to or inside a basket or vase of some sort. They make a terrific and edible gift idea. After all, who doesn't love cookies? Sadly, they can be very expensive gifts, especially when considering that cookies don't cost a whole lot to bake.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Here's how to make your own cookie bouquets at home without spending a fortune!&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;What You Will Need:&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Chopsticks or Wooden Skewers - Make sure they are heat-proof. If you're baking smaller cookies, then popsicle sticks would also work.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Cookies - Find a delicious cookie recipe that makes larger size cookies, your favorite or your gift recipients favorite will do fine.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Container - This needs to be a sturdy container that is a bit bottom heavy, especially if you plan to include more than a few big cookies. You can try putting some pebbles in the bottom to make sure the container won't tip over, if needed. Some ideas for containers include: a coffee mug, a metal or plastic pail, a basket, a vase, a planter, cookie jar or glass jar, glass bottle, a toy or wood box of some sort, teapot, porcelain or pottery serving ware.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Cellophane - The shiny, colored kind looks best, but the colored plastic wrap you get at your local supermarket would work too.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Ribbon - The curly kind works well for this. Any colors you like.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Decorations - Anything goes! What's appropriate to the occasion and what does the gift recipient like? Some ideas include: stuffed animals, small toys, candy, balloons, fake or real flowers, stickers or whatever you find at the local craft store.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Block of styrofoam or florists foam - You know that stereo you bought last December? You probably kept the box, just search your garage for some spare, clean, styrofoam.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;* Something to cover up the styrofoam or florist's foam - You can use a big ribbon, some moss, plastic grass, tissue paper crumpled up or whatever else you have handy.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Instructions:&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;1. When you place the cookie dough on the cookie sheet, press the dough down a bit to flatten it so that it doesn't spread too much while baking and so that the stick can be inserted properly. Before you bake the cookies, you must insert the chopstick or wooden skewer into one side of each cookie. Push it in almost the length of the cookie without going out the other end. This is an important step, as if your cookie is too big and your stick is not sturdy enough, it simply won't hold it and the cookie may fall apart when you pick it up. When baking big cookies, you probably won't be able to fit more than 3 cookies with their sticks to a sheet.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;2. After baking the cookies with their sticks, cool the cookies thoroughly, then wrap each one with the colored cellophane. A different color for each cookie would be ok, or all the same color appropriate to the occassion. Tie each one with some curly ribbon at the base where the stick comes out of the cookie. Tie it very tightly so the cookies will stay fresh on the stick. You can adorn each cookie with additional, larger ribbons or bows at this point. When using curly ribbon, don't forget to curl it!&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;3. Now cut your styrofoam or florist's foam to the size of the top of the container you chose. Then fit the foam in so it is nice and tight and near the top of the container. Remember, you can place something heavier in the bottom of the container so that it does not tip over. Small pebbles work well for this. Remember that the sticks will poke through the foam and into the bottom of the container.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;4. Here comes the fun part, let's assemble the cookie bouquet! Take each of your cookies and stick them through the foam so they go all the way through the foam and further, near to the bottom of the container. You can assemble the cookies in any manner you like, but most cookie bouquets have one cookie at the center that is taller than the other cookies, so keep that in mind. Decorate with additional ribbons, toys, candy, flowers, gifts etc. Each item can be attached with additional ribbon to the container or the sticks of the cookies or even with a glue gun (if appropriate).&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;5. Give your gift and watch the smiles! Make sure to give the bouquet as soon as possible after you have assembled it, you don't want the cookies to go stale!&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Tips:&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Make sure you bake enough cookies for your container, if baking small cookies, you may run out if you are filling a large container. Always bake more than enough. Surely your extras won't go to waste.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Bake both large and small cookies and use them both in the bouquet for a nice varied look like a more traditional flower bouquet.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;More Ideas:&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Some cookie bouquets use cutout cookies, these can be fun to make and decorate. Use your favorite sugar cookie cutout recipe and cut into shapes appropriate for the occasion. For cutout cookies to work, you may want to double your sugar cookie recipe as the cookies need to be nice and thick for the stick to go through them. For this type of cookie, wooden skewers will work best, chopsticks may be too thick. Then decorate the cookies with frosting. There are a multitude of them, and believe it or not, they all yield different results.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Insulated Non-stick Cookie Sheet&lt;br /&gt;Most insulated cookie sheets are made to be non-stick, and because insulated sheets are sometimes on the more expensive side, they tend to resist scratches, chipping, and peeling. Insulated cookie sheets are basically two sheets that have been connected around the edges, which creates a small pocket of air that cannot escape. The air inside of the pocket heats to the set temperature of the oven when the insulated cookie sheet is placed inside.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Insulated cookie sheets are very reliable for evenly baked cookies. Because the air inside the sheet heats to the temperature of the oven, it allows all the cookies on the sheet to cook and brown at the same rate. The evenly heated air prevents the cookie sheet from being hotter in certain spots, which is a common occurrence with regular cookie sheets. In addition to yummy cookies, most insulated cookie sheets are easy to clean because of their non-stick surfaces.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Aluminum Cookie Sheets&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Aluminum cookie sheets are very commonly used. The ease of cleaning a cookie sheet with a non-stick surface is amazing, and it practically eliminates the need to butter the sheet before cooking. Washing a non-stick cookie sheet is a breeze and hardly requires anything but a quick scrub.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Non-stick cookie sheets have a surface coating that makes them easy to clean, yet they are still able to produce delicious cookies. Keep in mind that the darker the non-stick surface, the quicker the cookies will brown. Therefore, it’s important to read the instructions that come with the cookie sheet to find out if the manufacturer recommends that the oven’s cooking temperature be lowered to compensate. Aluminum cookie sheets are good conductors of heat but are not good for ensuring that the cookies will brown. You can learn to make these designer cookies to sell or just to give to make your friends and family happy, but the first thing you need to start with is a great and easy sugar cookie recipe. After trying many, many different recipes, here is my favorite with the instructions to get them to turn out great every time.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Easy Sugar Cookie Recipe&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;1 1/2 cups butter/softened&lt;br /&gt;1 cup of white sugar&lt;br /&gt;1 cup of confectioners sugar&lt;br /&gt;4 eggs&lt;br /&gt;2 tsp vanilla&lt;br /&gt;5 cups all-purpose flour&lt;br /&gt;2 tsp baking powder&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;First, make sure your butter is softened. 1 1/2 cups of butter is three sticks. I soften them for 45 seconds in the microwave. You want them softened, not completely melted.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Next, add you white sugar a little at a time. Make sure it is mixed and finish mixing it on high. Then add the confectioners sugar, a little at a time with the mixer on a slow speed. After all the confectioners sugar is mixed in, once again, turn the mixer on high to really "fluff" up the mixture.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Now add the vanilla. I use clear vanilla to make my cookies look as white as possible. Next add the eggs, one at a time. Also, crack your eggs in a small bowl to make sure you don't get pieces of shell in your cookie dough.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;Once you have your eggs mixed in, add your salt and baking powder. Then add the flour slowly and again, one cup at a time, keeping the sides of the bowl scraped clean with a spatula. It takes a little more time to add the ingredients slowly like this, but it really makes a difference in the quality of cookie.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-size:85%;"&gt;There you have it. When frozen, remove dough from cookie sheets, place in heavy-duty, resealable plastic food bags and freeze until you want to bake a batch of cookies. Then thaw the cookie dough and follow recipe directions for baking.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Over-baked and Cracked Cookies&lt;/span&gt;&lt;br /&gt;Dough that is too dry will cause cookies to crack when baked. Line a heavy cardboard box, cookie tin or empty coffee can with aluminum foil or plastic food wrap.&lt;br /&gt;&lt;br /&gt;Wrap four to six cookies of the same size together in aluminum foil, plastic food wrap or plastic food bags and seal securely with tape; repeat until the container is full. Place the heaviest cookies at the bottom of the container and layer the wrapped cookies with bubble wrap or crumpled paper towels. Use either of these to line the container. Seal the container with tape.&lt;br /&gt;&lt;br /&gt;Put the container (tin, coffee can, etc.) into a sturdy cardboard box. Use bubble wrap or newspaper to protect the container.&lt;br /&gt;&lt;br /&gt;Print the mailing address and return address on the package in waterproof ink; mark the package "PERISHABLE FOOD" to encourage quick and careful handling. It’s like the fast food commercials that tempt you with a big juicy hamburger perfectly sitting on a fresh bun and when you actually purchase the burger, what you get is a shriveled piece of meat stuck between two flattened pieces of bun!&lt;/p&gt;&lt;p&gt;Do you want your chocolate chip cookies to come out soft and chewy every single time? The secret to perfect chocolate chip cookies is really very simple! And you can make them with any chocolate chip recipe at your disposal.&lt;/p&gt;&lt;p&gt;The problem with most chocolate chip cookie recipes is they have you drop a spoonful on a cookie sheet and bake them for 9 to 12 minutes until the tops are golden brown. That is too long! By the time the tops are golden brown, your bottoms are dark brown, or worse, burnt. After the cookies have baked this long, removing them from the oven in this over-baked condition and having them stand only causes them to harden up like jawbreakers. Instead of soft, chewy cookies that melt in your mouth, you end up with hard, crunchy cookies with burnt bottoms.&lt;/p&gt;&lt;p&gt;Dropping larger amounts on the cookie sheet to make bigger cookies doesn’t work. It takes longer for the middle of the cookie to bake and you still end up with burnt bottoms and hard cookies.&lt;/p&gt;&lt;p&gt;Instead of following the recipe instructions to bake 9 to 12 minutes, underbake your cookies by a couple of minutes. The first time you try this, you will have to play around with the time and the size of your cookie drops to get the perfect chocolate chip cookie for your oven. But, as a general rule, after you put your cookie tray in your oven (always on the top rack), set your timer for 6 to 8 minutes. When you pull your cookies out, the entire top should NOT be golden brown. Instead, the peaks of the top of the cookie should just be turning brown. At this time, the entire bottom of your cookie is golden brown and the rest of cookie is the same color as the batter.&lt;/p&gt;&lt;p&gt;Remove the cookie tray from the oven and let them stand for a minute or so since the cookies will be incredibly soft and will fall apart if you try to immediately remove them from the cookie sheet. It is best to use a standard ceramic mug with a solid base. You can either purchase a new mug for your occasion or use your gift recipient's favorite coffee mug for a special treat. Buy a small piece of floral foam, available at most craft stores, and cut the foam in the shape of cylinder to fit in the mug. It should be snug, but you shouldn't have to force the foam into the mug. Cut the foam to be about an inch shorter than the height of the mug. Because these cookies need to be thicker, you may have to adjust your cooking time and temperature from what you normally use. Once the cookies are cooled, it is time for cookie decorating. If the kids are helping, this is a great project for them. Use decorative icing to write personal messages on the cookies, or coat with icing and then press candies, sprinkles, etc. into the iced cookies. Bake a few extra cookies and let the kids pick out their favorites when you're done decorating them. It is best not to wrap the decorated cookies in plastic because the icing may be ruined. Using a basic royal icing recipe, a decorating bag and tip, you can decorate your cookie any way you like. Most often tip #1 is used for fine outlining the cookie and decorating the details. You can also use other decorating tips like the star tips #16 and #21 to achieve zig zags and interesting borders.&lt;/p&gt;&lt;p style="font-family: verdana; text-align: justify;"&gt;The second technique is the color flow method. This is a method made popular by Wilton Cake Decorating. To make the color flow icing, combine:&lt;/p&gt;&lt;ul&gt;&lt;li&gt;&lt;span style="font-size:100%;"&gt;1 pound of confectioners sugar&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size:100%;"&gt;2 tablespoons of Wilton Color Flow Mix&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size:100%;"&gt;1/4 plus 1 teaspoon of water&lt;/span&gt;&lt;/li&gt;&lt;/ul&gt;&lt;p style="font-family: verdana; text-align: justify;"&gt;Blend on low speed for seven minutes.&lt;/p&gt;&lt;p style="font-family: verdana; text-align: justify;"&gt;This color flow icing will be stiff. Using a small piping tip (#1 or #2) outline your cookie. After the outline of the cookie has "set" or hardened, you need to "flood" the cookie with the thinned icing. To thin your color flow icing, add a few drops of water at a time until it is a thinner consistency that will run.&lt;/p&gt;&lt;p style="font-family: verdana; text-align: justify;"&gt;Now take your thinned icing and pipe it into the center area of your cookie. The icing will spread and fill in your cookie area. After the color flow has set, you can add more detail to your cookie with more of the thicker color flow icing or the royal icing.&lt;/p&gt;&lt;p style="font-family: verdana; text-align: justify;"&gt;The third technique for decorating designer cookies is using fondant. Many people are "afraid" to try fondant but it is actually very easy. You first need to tint the fondant the color that you need for your cookie and then roll it out to approximately 1/18" thick. Using the same cookie cutter that you used to cut out the cookie, cut the same shape out of your fondant.&lt;/p&gt;&lt;p style="font-family: verdana; text-align: justify;"&gt;Next, lightly moisten the back of the fondant shape with water - not too much or you will make the fondant "soggy". Lay the fondant shape on your cookie and lightly press down, shape, and smooth the edges with your fingers. When the holidays get closer you can get that last bit of shopping done or last present made instead of spending all your time in the kitchen.&lt;/p&gt;&lt;p&gt;FREEZING COOKIE DOUGH&lt;/p&gt;&lt;p&gt;Cookie dough will freeze well for 4 to 6 weeks. Rolls of dough should be sealed tightly in plastic wrap (chill in refrigerator first before freezing). Other kinds of dough should be stored in airtight containers. Drop cookies (unbaked) may be frozen on cookie sheets and transferred to freezer bags. Let stand at room temperature for about 30 minutes before baking.&lt;/p&gt;&lt;p&gt;Don't try to freeze soft meringue-type cookie dough. Chocolate chip, brownies, peanut butter, and sugar cookie dough (or anything similar) freezes well. Let the dough defrost in the refrigerator (about 2-3 hours). Make sure to label the container with the date and type of cookie dough.&lt;/p&gt;&lt;p&gt;FREEZING BAKED COOKIES&lt;/p&gt;&lt;p&gt;Almost any baked cookie freezes well. Let cookies completely cool before freezing. Wrap cookies individually in plastic wrap then store them in a ziploc freezer bag or storage tin (coffee cans or holiday tins work great). You can also just layer the cookies between layers of waxed paper in the container, but the individually wrapped ones will store longer.&lt;/p&gt;&lt;p&gt;Freeze frosted cookies uncovered first until they are firm. Then pack them in airtight container lined with plastic wrap or foil. Make sure to label the container with the date and type of cookies. Unfrosted cookies can be frozen up to 6-12 months (frosted, about 3 months). Frozen cookies thaw in about 10 minutes at room temperature (if you can wait that long). If cookies should be crisp when thawed, remove them from the container before thawing.&lt;/p&gt;&lt;p&gt;Gingersnaps&lt;/p&gt;&lt;ul&gt;&lt;li&gt;1 c. sugar&lt;/li&gt;&lt;li&gt;3/4 c. butter&lt;/li&gt;&lt;li&gt;2 eggs&lt;/li&gt;&lt;li&gt;3 c. flour&lt;/li&gt;&lt;li&gt;2 tsp. baking soda&lt;/li&gt;&lt;li&gt;1 tsp. ginger&lt;/li&gt;&lt;li&gt;1 tsp. cinnamon&lt;/li&gt;&lt;li&gt;1/2 tsp. cloves&lt;/li&gt;&lt;li&gt;1/2 c. molasses&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;In a large bowl, cream sugar and butter. Add eggs. Stir in flour, baking soda, ginger, cinnamon, and cloves. Add molasses, stirring well. Refrigerate dough for an hour or two to chill. Preheat oven to 350 degrees. Roll dough into 1-inch balls. Roll each ball in a little sugar and place 2 inches apart on an ungreased cookie sheet. Bake for 10 minutes.&lt;/p&gt;&lt;p&gt;Snickerdoodles&lt;/p&gt;&lt;ul&gt;&lt;li&gt;1 c. butter&lt;/li&gt;&lt;li&gt;1 1/2 c. sugar&lt;/li&gt;&lt;li&gt;2 eggs&lt;/li&gt;&lt;li&gt;2 3/4 c. flour&lt;/li&gt;&lt;li&gt;2 tsp. cream of tartar&lt;/li&gt;&lt;li&gt;1 tsp. baking soda&lt;/li&gt;&lt;li&gt;1/2 tsp. salt&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;In a large bowl, cream together butter, sugar, and eggs. Stir in flour, cream of tartar, baking soda, and salt. Refrigerate dough for an hour or two to chill. Preheat oven to 350 degrees. Roll the dough into 1-inch balls. Roll each ball in a mixture of cinnamon and sugar. Place 2 inches apart on an ungreased cookie sheet. Bake for 10 to 12 minutes.&lt;/p&gt;&lt;p&gt;Peanut Butter Crackles&lt;/p&gt;&lt;ul&gt;&lt;li&gt;1 3/4 c. flour&lt;/li&gt;&lt;li&gt;1/2 c. sugar&lt;/li&gt;&lt;li&gt;1/2 c. brown sugar&lt;/li&gt;&lt;li&gt;1 egg&lt;/li&gt;&lt;li&gt;1 tsp. vanilla&lt;/li&gt;&lt;li&gt;1 tsp. baking soda&lt;/li&gt;&lt;li&gt;1/2 tsp. salt&lt;/li&gt;&lt;li&gt;1/2 c. butter, softened&lt;/li&gt;&lt;li&gt;1/2 c. peanut butter  Chocolate kisses or stars&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Mix flour, baking soda, and salt. Mix together butter, peanut butter, and sugar. Beat in egg and vanilla. Stir in flour mixture. Shape dough into 1-inch balls. Roll in sugar and place on a greased cookie sheet. Bake at 375 degrees for 12 minutes. Makes 36 cookies.&lt;br /&gt;&lt;br /&gt;&lt;hr width="50%"&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;CHOCOLATE CHIP COOKIES&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1/4 c. margarine&lt;/li&gt;&lt;li&gt;1 tbsp. granulated fructose&lt;/li&gt;&lt;li&gt;1 egg&lt;/li&gt;&lt;li&gt;1 tsp. vanilla extract&lt;/li&gt;&lt;li&gt;3/4 c. flour&lt;/li&gt;&lt;li&gt;1/4 tsp. salt&lt;/li&gt;&lt;li&gt;1/2 c. mini semi-sweet chocolate chips&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;Cream together margarine and fructose, beat in egg, water and vanilla. Combine flour, baking soda and salt in sifter. Sift dry ingredients into creamed mixture, stirring to blend thoroughly. Stir in chocolate chips. Drop by teaspoonsful onto lightly greased cookie sheet about 2 inches apart. Bake at 375 degrees for 8 to 10 minutes. Bake at 350 degrees for 15-20 minutes.  Makes about 40 cookies.&lt;br /&gt;&lt;br /&gt;&lt;hr width="50%"&gt;&lt;br /&gt;Sugar Free Oatmeal Cookies&lt;br /&gt;&lt;br /&gt;Combine &amp;amp; beat:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1/4 cup butter&lt;/li&gt;&lt;li&gt;1/2 cup oil, blended&lt;/li&gt;&lt;li&gt;1 cup Splenda&lt;/li&gt;&lt;/ul&gt;Add 2 eggs and beat until light&lt;br /&gt;&lt;br /&gt;Combine in separate bowl:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1 cup flour&lt;/li&gt;&lt;li&gt;1 cup Oatmeal&lt;/li&gt;&lt;li&gt;1 teaspoon cinnamon&lt;/li&gt;&lt;li&gt;3/4 teaspoon nutmeg&lt;/li&gt;&lt;li&gt;1 teaspoon baking soda&lt;/li&gt;&lt;li&gt;1/4 cup sour milk (or 1 teaspoon vinegar and enough milk to make 1/4 cup&lt;/li&gt;&lt;/ul&gt;Add dry ingredients and milk alternately to egg mixture. Beat well.&lt;br /&gt;&lt;br /&gt;Optional Ingredients:&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1/2 cup raisins&lt;/li&gt;&lt;li&gt;1/2 cup chopped nuts&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;Make balls about the size of a walnut. Place on greased Cookie Sheet. Press down with a fork.&lt;br /&gt;Bake about 15 minutes at 400º or until golden brown. Slide cookies off onto paper towel to cool.&lt;br /&gt;Store in tightly covered container.&lt;br /&gt;&lt;br /&gt;&lt;hr width="50%"&gt;&lt;br /&gt;And a twist on the oatmeal....&lt;br /&gt;&lt;br /&gt;Double-Chocolate Oatmeal Cookies&lt;br /&gt; &lt;br /&gt;&lt;ul&gt;&lt;li&gt;1 cup  Sugar&lt;/li&gt;&lt;li&gt;1/2 cup  Whole-wheat flour&lt;/li&gt;&lt;li&gt;1 cup  (2 sticks) margarine&lt;/li&gt;&lt;li&gt;1/4 cup  Cocoa&lt;/li&gt;&lt;li&gt;1 Large egg&lt;/li&gt;&lt;li&gt;2 cup  Rolled oats&lt;/li&gt;&lt;li&gt;1/4 cup  Water&lt;/li&gt;&lt;li&gt;1/2 ts Baking soda&lt;/li&gt;&lt;li&gt;1 ts Vanilla&lt;/li&gt;&lt;li&gt;1/2 cup  Semisweet chocolate chips&lt;/li&gt;&lt;li&gt;1 1/4 cup  All-purpose flour&lt;/li&gt;&lt;/ul&gt; &lt;br /&gt;Cream sugar and margarine together at medium speed until light and fluffy. Add egg, water, and vanilla, and mix at medium speed for 30 seconds, scraping down the bowl before and after adding egg, water and vanilla. Bake at 350 for 12 to 14 minutes, or until cookies are not quite firm; do not over bake, or cookies will be too hard. Remove them to a wire rack and cool to room temperature. You will then melt the butter in the microwave for about 30 seconds, you will take it out of the microwave and give it a stir. You will then add the cocoa and start to stir in the cocoa until it is mixed in well. You will then add the sugar, milk and salt and stir all of the added ingredients together. The next thing you will add is the vanilla bean paste, peanut butter, and oatmeal. You will thoroughly combine, and mix the entire ingredients well. You will then take a Tablespoon and spoon out into your hand forming the dough balls into the cookie shape. You will want a baking sheet with parchment for adding the cookies to the sheet. You will put them onto the parchment paper and let them hang out for a while until they have fully set. This should make about 12 cookies.&lt;br /&gt;&lt;br /&gt;So, if you are feeding more than your family and are having a dinner party or large family gathering you will need to double the recipe, or even multiply for a larger number to give you the amount you will need for your event.&lt;br /&gt;&lt;br /&gt;This is an easy recipe to make, and of course it is a no bake recipe. So if it is during the winter months, and your children are stirring about the house. There is inclement weather outside. This is an easy recipe, and does not take too much time, and it would be fun to prepare with your children.&lt;br /&gt;&lt;br /&gt;Ingredients you will need:&lt;br /&gt;&lt;br /&gt;1 1/4 Cup of grated carrots&lt;br /&gt;&lt;br /&gt;1 Cup of whole wheat flour&lt;br /&gt;&lt;br /&gt;1/2 Cup of Raisins&lt;br /&gt;&lt;br /&gt;1/2 Cup of I can't believe it is not butter&lt;br /&gt;&lt;br /&gt;1/2 Cup of packed brown sugar&lt;br /&gt;&lt;br /&gt;1/2 Cup of quick oats&lt;br /&gt;&lt;br /&gt;2 Eggs medium size&lt;br /&gt;&lt;br /&gt;1/2 Teaspoon of cinnamon and a good vanilla bean paste&lt;br /&gt;&lt;br /&gt;1/4 Teaspoon of nutmeg&lt;br /&gt;&lt;br /&gt;1/4 Cup of warm water&lt;br /&gt;&lt;br /&gt;1 Teaspoon of baking powder&lt;br /&gt;&lt;br /&gt;1 Tablespoon of confectioners sugar&lt;br /&gt;&lt;br /&gt;Non Stick Spray&lt;br /&gt;&lt;br /&gt;First you will preheat your oven to 350 if it is electric and about 325F if it is gas. If you have convection fan turn it off during the baking. It will cause too much browning, and more than likely burn these cookies. You will want to go ahead a spray your baking pan, so you are ready to go directly into the pan after mixing all of the ingredients. I recommend a square or rectangular pan for these cookies.&lt;br /&gt;&lt;br /&gt;In a mixing bowl you will add the warm water not hot water, the margarine, and the brown sugar, and the vanilla bean paste, and mix them together. You will then add your eggs and beat it well, and mix with the sugar mixture. You will then add your carrots and raisins, and nutmeg and cinnamon, and mix well.&lt;br /&gt;&lt;br /&gt;In a separate bowl you will add the flour, oatmeal and baking powder and mix well. Once all of the dry are mixed together you will add the wet to the dry and mix well.&lt;br /&gt;&lt;br /&gt;Pour into non stick pan or sprayed pan and bake for about 20 to 25 minutes. You will turn about halfway through the baking process in the oven to ensure even baking. Remove from the oven and let cool, and sprinkle with the confectioners sugar.
